Yuck! Mine like sleeping under the headboard, too, but I’ve yet to find any poop back there thankfully!
You can either put an old towel down there so she won’t want to poop there and pray she doesn’t move it, put newspapers there for easy cleaning, or find a way to block it off. Is it pushed up against a wall? If you have one of the long sides of the bed pushed up against the wall you may be able to get a playpen wrapped around it and shove the ends of the playpen in between the bed and the wall- that’s how I keep my ferrets from going near the computer or fish tank.
It’s also great to have if you need to put her somewhere else for a playtime! I use mine when my cat and dog are in my room. Make sure it’s an 11 panel because I don’t think an 8 panel would be able to go around.

You can either build something that will block her away from there or train her out of it. To train her you will have to catch her in the act. Grab her by the scruff (as her mother would do) and firmly tell her no. Give her a second chance. If she does it again, repeat what I said and then put her in her cage for about 10 min. Keep repeating this and she should catch on.
She could be doing this out of boredom though. If this is the case, make sure you are playing with her for at least one hour and giving her an additional hour of free roaming a day (this is minimum). You could also get her a friend to help keep her busy (if her cage is big enough and if she gets along with other ferrets). Ferrets also have a thing for playing with cats… maybe, if you have the time and money, get her a kitten friend if you don’t feel like taking on another ferret. Good luck!
i also have a ferret to and she loves my bed. So to keep your ferret away from bed is easy all you have to do is to close bedroom door before leting she her out running around…p.s my ferret dont poop on my bed she sleeps on it!!!!!!!!!
